Warm Broccoli Salad with Hard Boiled Egg Crumble

So if you dyed easter eggs last weekend, you probably have a ton left sitting in your fridge. I do love a hard boiled egg with just a little sprinkle of salt and pepper.  Or sliced on a nice spinach salad with some red onion, crispy bacon and a nice balsamic or red wine vinaigrette.  I was however, trying to think of something a little outside of the box to do with the eggs. My husband loves broccoli and it seems we usually just eat it steamed or roasted with salt and pepper when we have it. I decided to experiment with combining the two and it ended up pretty good. This is a super easy, 15 minute max side dish - Warm Broccoli Salad with Hard Boiled Egg Crumble.

Warm Broccoli Salad with Hard Boiled Egg Crumble
Serves 4




Ingredients:


Broccoli, 3 medium heads
Hard boiled eggs, 2
Garlic, 1 clove
Shallot, 1
Honey, 1 tsp
Dijon mustard, 1 tsp
Oil, 1 T
Red wine vinegar, ½ T
Salt and pepper



Chop up the broccoli into small bite size pieces. Boil a pot of water with 4 inches of water.  

Add the broccoli pieces to a strainer that will sit above the water and cover with a lid. Cook for 8 minutes.


Add the chopped garlic and shallot to a pan with a little oil. Wait to do this until the broccoli has been cooking for about 5 minutes. Saute the garlic and onion for two minutes. 



In a separate boil, mix the honey, mustard, oil, vinegar and salt and pepper.


Add the cooked broccoli and finely chopped hard boiled egg to the pan with the garlic and onion. Pour the sauce over, mixing until well combined and cook for 1-2 more minutes.



Easy enough - you are done, enjoy!



Better Bonus Tip: Feel free to do this with chopped up green beans or asparagus. Also, you could make the dish even more simple by sautéing the shallot and garlic, then mixing with the broccoli and egg and instead of making a dressing, just top with salt and pepper, lemon juice and zest. I might try this next time, because I love lemon on veggies.
